These oatmeal bars are satisfying, not too sweet, and are simple to make in large batches. They store well for a quick & easy breakfast or snack on the go. Make sure to not over-bake if you prefer a chewier bar. (full recipe below)
CHOCOLATE CHUNK OATMEAL BARS (yields 20 bars)
2 & 1/2 cups old fashioned oats
1 cup all purpose flour
1 cup whole wheat flour
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (liquid) coconut oil
1 tablespoon vanilla
1 & 1/2 cups semi-sweet chocolate chunks or chips
In a large mixing bowl, combine the oatmeal, white flour, whole wheat flour, brown sugar, baking soda, salt, coconut oil, vanilla and eggs. Beat until combined and the dough holds together. Mix in the chocolate chunks/chips.
Line a 9×13 inch baking pan with aluminum foil. Transfer the batter into the prepared pan, spreading the dough into the pan evenly. If desired, add more chocolate chunks/chips on top.
Bake at 350 degrees for 20 minutes. Allow bars to cool in pan for at least 30 minutes before slicing and serving. These remain fresh quite long when stored in an air tight container. Enjoy!
